A classic! But made slightly different – gluten free, dairy free and good source of fibre and monounsaturated fat (a good one). Perfect for breakfast, afternoon snack or pudding - depending on what you serve it with!

Makes 8 generous slices | Prep: 5 minutes + Cook: 50–60 minutes

  • 2 large or 3 small bananas (ripe)

  • 2 cups oats

  • 2 eggs

  • 1/3 cup olive oil

  • 1/3 cup honey

  • 1/4 cup milk (plant based for dairy free)

  • 1 tsp baking powder

  • 1 tsp vanilla

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

Method

  1. Mixed all ingredients together in a food processor until combined

  2. Pour into a lined loaf tin

  3. Bake for 50-60 minutes at 180oC until baked

  4. Allow to cool for 10 minutes in the tin before turning out

Serve with topping of your choice – personally I love Greek yoghurt & berries or Peanut butter & chia seed jam – delicious x
