These balls are my healthy homage to my favourite autumn pudding – sticky toffee pudding. All the flavour of the rib-sticking pud, without them sticking to your ribs!

Makes 12 | Prep: 15 minutes + Chilling: 2 hour

Ingredients

  • 150g pitted dates

  • 75g ground almonds

  • 50g oats

  • 30g cashew butter

  • 1 tbsp honey or maple syrup

  • 1 /2 tsp ground sweet cinnamon

  • 1/4 tsp sea salt

Method

  1. Cover and soak the dates in boiling water for 5 minutes, before draining thoroughly

  2. Add the dates plus the rest of the ingredients into a food processor and blend until smooth

  3. With slightly damp hands, roll mixture into 12 small balls

  4. Chill balls in the fridge for 2 hours until firm

  5. Store in an airtight container in the fridge
