Serves 30 | Prep: 5 mins + Cook: 10 mins

A healthier, and much simpler, version of a store cupboard staple (except you need to keep this one in the fridge). So good the kids didn’t know I’d swapped the store bought one :)

Ingredients

  • 3 tbsp honey (or maple syrup)

  • 2 mugs of frozen strawberries - whatever frozen berries you fancy

  • 1 tbsp chia seeds

Method

  1. Put the honey and fruit into a saucepan and bring to a gentle simmer.

  2. Cook for approx. 5 minutes until the fruit is soft, then mash down the fruit with a fork or potato masher (you can use a blender at this stage if you prefer a super smooth jam).

  3. Stir in the chia seeds and continue to cook on a low heat for another 5 minutes, stirring every now and then.

  4. Poor into a clean jam jar and, once cooled, store in the fridge for up to 1 week.
